Ingredients

  • 1/2 cup butter
  • 3/4 cup sugar
  • 3 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup applesauce
  • 6 tablespoons sorghum
  • 1 cup raisins
  • 1/2 cup pecans
  • 1 (3 oz) package cream cheese

Instructions

  1. Cream butter and 3/4 cup sugar until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Combine dry ingredients; set aside.
  4. Combine applesauce and sorghum.
  5. Add dry ingredients alternately with applesauce mixture to egg mixture; fold in raisins and pecans.
  6. Pour batter into a greased loaf pan.
  7. Bake at 350°F (175°C) for about 60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before removing from pan and slicing.
