Ingredients

  • 1/2 c. butter or margarine
  • 2 c. sugar
  • 2 eggs
  • 2 1/2 c. sifted flour
  • 1 1/2 tsp. soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 1 lb. can applesauce
  • 1/2 c. raisins
  • 1/2 c. chopped pecans
  • 1 small can crushed pineapple, drained
  • 1/2 c. chopped cherries

Instructions

  1. Cream the butter or margarine in a mixing bowl.
  2. Gradually add sugar and beat until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Sift together the flour, soda, salt, cinnamon, and allspice.
  5. Add the dry ingredients to the creamed mixture alternately with the applesauce, starting and ending with the dry ingredients.
  6. Stir in the raisins, chopped pecans, drained crushed pineapple, and chopped cherries.
  7. Pour the batter into a greased and lightly floured Bundt pan.
  8. Bake at 350°F (175°C) for 60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan before removing.
