Ingredients

  • 6 oz dried apricots
  • 1 1/2 cups brown sugar
  • 3 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 cup chopped walnuts
  • 1/3 cup butter
  • 1/2 cup honey
  • 1 3/4 cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon cloves

Instructions

  1. Finely chop the dried apricots.
  2. Cream together the butter, brown sugar, and honey.
  3. Add the eggs and beat well.
  4. Combine the baking powder, cinnamon, salt, and cloves.
  5. Add the dry ingredients to the creamed mixture.
  6. Mix well until combined.
  7. Stir in the chopped walnuts and apricots.
  8. Spread the batter in a greased and floured 15 x 10 x 1-inch baking pan.
  9. Bake at 350°F for 20 to 25 minutes.
  10. Cool for 15 minutes and then brush with glaze (if desired).
