  • 1 c. alcaparrado (olive-caper mix)
  • 1 (8 oz.) can tomato sauce
  • 2 Tbsp. dry white wine (optional)
  • salt to taste
  • 1 lb. small red beans, soaked overnight and cooked tender
  • 3 c. rice
  • 3 Tbsp. olive oil

Instructions

  1. Drain cooked beans and set aside, reserving 3 cups of the cooking liquid.
  2. Wash rice under cold running water and drain.
  3. Heat oil in a heavy kettle or Dutch oven.
  4. Brown salt pork until browned.
  5. Add chopped onion and green bell pepper and saute for 3 minutes.
  6. Stir in the rice and cook for a minute.
  7. Add the cooked beans and the reserved cooking liquid.
  8. Mix in salt, pepper, oregano, and other seasonings as desired.
