Ingredients

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon-style mustard
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried dill weed
  • 1/4 teaspoon ground black pepper
  • 6 oz fresh spinach, washed and torn into bite size pieces
  • 1 cup shredded red cabbage
  • 1 can artichoke hearts, drained and quartered
  • 4 oz cooked ham, cut into thin strips
  • 4 oz Provolone cheese, cut into thin strips

Instructions

  1. Whisk olive oil, red wine vinegar, lemon juice, Dijon mustard, sugar, dill weed, and black pepper to make the dressing.
  2. In a large bowl, combine spinach, red cabbage, artichoke hearts, ham, and Provolone cheese.
  3. Pour the dressing over the salad.
  4. Toss gently to coat all ingredients evenly.
