Ingredients

  • 2 onions, chopped
  • 1 medium eggplant, pared and cut up
  • 1 lb hamburger
  • oil as needed
  • salt as needed
  • 3 Tbsp oil
  • 3 Tbsp flour
  • 3/4 cup milk
  • 3/4 cup stock
  • 2 cups shredded cheese
  • 1 tsp nutmeg

Instructions

  1. Saute the chopped onions, eggplant, and hamburger separately in oil until done.
  2. Drain the cooked ingredients and set aside.
  3. Add salt to taste.
  4. Make a sauce with 3 tablespoons oil and the flour, cooking over low heat.
  5. Add the stock and milk to the sauce and cook until thickened.
  6. Gradually add a little of the hot sauce to the egg yolks, then return the mixture to the sauce and cook briefly.
  7. In a buttered casserole dish, layer eggplant, meat, shredded cheese, sauce, and a sprinkle of nutmeg.
  8. Repeat the layers as needed.
  9. Beat egg whites until stiff and spread on top of the layered dish.
  10. Sprinkle a little cheese and nutmeg over the top.
  11. Bake at 350°F (175°C) for 30 minutes until bubbly and golden.
