  • 4 lb. potatoes
  • 1 small onion
  • 1 pkg. onion soup mix
  • 1/2 cup margarine
  • 2 Tbsp. flour
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 4 cups milk
  • 4 cups shredded Cheddar cheese
  • 1/2 cup crushed seasoned croutons
  • paprika
  • Tabasco sauce
  • kielbasa sausage

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice potatoes into thin slices, leaving peels on, to about 8 cups.
  3. Cook and stir chopped onion and onion soup mix in margarine until tender.
  4. Stir in flour, salt, and pepper.
  5. Cook over low heat, stirring constantly, until mixture is bubbly. Remove from heat.
  6. Stir in milk, 3 cups of shredded Cheddar cheese, and a dash of Tabasco sauce. Heat to boiling, stirring constantly.
  7. Boil and stir for 1 minute.
  8. Place potato slices in an ungreased large baking dish.
  9. Slice kielbasa and add to the dish.
  10. Pour cheese sauce over potatoes and kielbasa.
  11. Bake uncovered for 1 hour.
  12. Mix remaining 1 cup of cheese and crushed seasoned croutons and sprinkle over the top.
  13. Sprinkle with paprika.
  14. Bake uncovered for an additional 15 to 20 minutes until top is brown and bubbly.
