Ingredients

  • 1/2 cup reduced fat peanut butter
  • 2/3 cup brown sugar
  • 1 egg
  • 1 cup mashed ripe bananas
  • 2 teaspoons baking soda
  • 2 tablespoons hot water
  • 1 1/4 cups flour
  • 1/2 teaspoon salt
  • 3/4 cup oatmeal
  • 1 cup raisins

Instructions

  1. Cream the peanut butter and brown sugar together.
  2. Add the egg and mashed bananas to the mixture.
  3. Dissolve the baking soda in hot water and add it to the mixture.
  4. Add the flour, salt, and oatmeal, and mix well.
  5. Microwave the raisins for a few seconds to soften them.
  6. Add the softened raisins to the batter and mix well.
  7. Pour the batter into greased muffin tins or baking cups.
  8. Bake in a preheated oven at 350°F (175°C) for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
