Ingredients

  • 1 lb. ground beef
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1 can (16 oz.) kidney beans, rinsed and drained
  • 1 can (15 1/4 oz.) whole kernel corn, drained
  • 1 can (15 oz.) tomato sauce
  • 1 can (14 1/2 oz.) diced tomatoes, undrained
  • 1 can (4 oz.) chopped green chilies
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1 tsp. ground cumin
  • 1/2 tsp. sugar
  • 1/2 tsp. pepper

Instructions

  1. In a Dutch oven over medium heat, cook the ground beef, chopped onion, and chopped green pepper until the meat is no longer pink.
  2. Drain any excess fat from the Dutch oven.
  3. Stir in the kidney beans, drained corn, tomato sauce, diced tomatoes with their juice, chopped green chilies, chili powder, salt, ground cumin, sugar, and pepper.
  4. Mix well to combine all ingredients.
  5. Bring to a simmer, then cover and bake in a preheated oven at 375°F (190°C) for about 30 minutes.
  6. Remove from oven and serve hot.
