Ingredients

  • 1 3/4 cups lentils
  • 2 1/2 quarts water
  • 1 bay leaf
  • 2 cups chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 large carrots, thinly sliced
  • 1/2 cup thin sliced celery
  • 1/2 cup chopped green pepper
  • 16 oz. can tomatoes, drained
  • 1 tablespoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon marjoram
  • 1/4 teaspoon sage
  • 1/4 teaspoon thyme
  • 8 oz. cheese

Instructions

  1. Combine lentils, water, and bay leaf in a large saucepan. Bring to a boil, lower heat, cover, and simmer for 30 minutes.
  2. Drain the lentils and transfer them to a 13 x 9 x 2-inch baking dish.
