A hearty baked pheasant dish featuring tender game meat cooked with mushrooms, almonds, and cream, perfect for special occasions or cozy family dinners.

Ingredients

  • 2 pheasants or 4 quail
  • seasoned flour
  • 3 Tbsp butter
  • 1/2 lb fresh mushrooms
  • 1/3 cup sliced almonds
  • 1/2 small onion, chopped
  • 1 pint cream
  • 1 Tbsp salt
  • 1 tsp pepper
  • 1 cup dry sherry
  • 3 celery stalks, chopped

Instructions

  1. Quarter the pheasants or half the quails.
  2. Dip the game pieces in seasoned flour and brown in butter.
  3. Set aside the browned game.
  4. Saute mushrooms, sliced almonds, chopped onion, and chopped celery in butter.
  5. Place the browned game in a Dutch oven over the sauteed mixture.
  6. Cover and bake at 350°F (175°C) for 1 hour and 30 minutes.
  7. Add cream, salt, pepper, and dry sherry to the Dutch oven.
  8. Cover and bake for an additional 30 minutes or until the birds are tender.
