  1. Saute bacon pieces in a large skillet until crisp.
  2. Remove bacon and saute strips of lean beef until evenly browned.
  3. Add garlic, mushrooms, bay leaves, parsley, salt, thyme, pepper, and bacon to the skillet.
  4. Make a roux by melting margarine in a saucepan and adding flour, stirring constantly.
  5. When the roux is thick, add the condensed consomme (and wine if using).
  6. Cook until slightly thickened, stirring constantly.
  7. Add the beef and mushroom mixture to the saucepan with the roux.
  8. Cover and simmer until the beef is tender, about 1 1/2 hours.
