- In a skillet, brown beef cubes in 3 tablespoons of olive oil.
- Transfer the browned beef to a covered baking dish.
- Pour Burgundy wine into the skillet, scrape up brown bits, and pour over the beef.
- Add bay leaf, thyme, minced garlic, salt, tomato paste, and beef broth to the dish.
- Cover and bring to a boil, then transfer to an oven preheated to 325°F (160°C).
- Bake for 2 to 3 hours until beef is tender.
- Discard the bay leaf.
- Remove the beef from the dish. Make a roux with 2 tablespoons of flour and 2 tablespoons of butter.
- Saute sliced mushrooms in 2 tablespoons of butter until browned.
- Add mushrooms, pearl onions, and cooked beef back into the dish with the roux; mix well.
- Serve over cooked rice.
