Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 2 beaten eggs
  • 1 cup sugar
  • 3/4 cup mashed strawberries or raspberries
  • 1 1/2 cups whole berries
  • 1/2 cup mashed ripe banana
  • 1/4 cup oil
  • 1 1/2 teaspoons finely shredded orange peel
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine flour, ground cinnamon, baking soda, ground nutmeg, and salt in a bowl.
  3. In another bowl, stir together eggs, sugar, mashed strawberries or raspberries, mashed banana, oil, and orange peel.
  4. Add the flour mixture to the wet ingredients, stirring until just combined.
  5. Fold in chopped walnuts.
  6. Pour the batter into a greased loaf pan.
  7. Bake at 350°F (175°C) for 60 to 70 minutes.
  8. Cool in the pan for 10 minutes, then remove and cool on a rack.
