Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup mashed banana
  • 1 1/4 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups raw bran
  • 1 1/4 cups whole wheat pastry flour
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon light salt
  • 2 1/2 teaspoons cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/2 cup raisins
  • 1/3 cup brown sugar
  • 1/4 cup dark molasses
  • 3 tablespoons oil
  • 1 egg
  • 1 cup nonfat milk

Instructions

  1. Preheat oven to 400°F.
  2. Combine bran, flour, baking soda, salt, cinnamon, nutmeg, and raisins in a bowl. Mix thoroughly.
  3. In a separate bowl, beat together brown sugar, molasses, oil, egg, and milk.
  4. Add the wet ingredients to the dry ingredients and stir until just moist.
  5. Fill muffin tins two-thirds full of batter.
  6. Bake for 15 to 18 minutes until a toothpick inserted into the center comes out clean.
