Barley Burgers

Hearty barley burgers packed with mushrooms, walnuts, and savory broth, perfect for a vegetarian main course or a tasty lunch in pita bread.

Ingredients

  • 1/2 cup barley
  • 2 1/2 cups water
  • 1 onion
  • 1 cup chopped walnuts
  • 4 oz. can mushrooms
  • 4 slices bread crumbs
  • 4 packages George Washington broth
  • 5 eggs

Instructions

  1. Cook the barley in 2 1/2 cups of water until tender, then drain and let cool.
  2. Chop the onion and mushrooms finely.
  3. In a large bowl, combine cooked barley, chopped onion, chopped walnuts, canned mushrooms, bread crumbs, broth, eggs, and flour. Mix well.
  4. Form the mixture into patties.
  5. Fry the patties in a skillet until golden brown on each side, about 4-5 minutes per side.
  6. Serve the burgers in pita bread.
