Ingredients

  • 2 (15 oz.) cans corned beef hash
  • 1/4 cup all-purpose flour
  • 4 eggs
  • 2 eggs
  • 2 cups light cream (20%)
  • 1 cup shredded Swiss cheese (about 4 oz.)
  • 1 small head cabbage, shredded
  • 2 green onions with tops, finely chopped
  • 1 teaspoon salt
  • 5 drops red pepper sauce

Instructions

  1. Preheat oven to 375°F.
  2. Mix corned beef hash, flour, and 2 eggs thoroughly.
  3. Press the mixture firmly and evenly against the bottom and sides of an ungreased 13 1/2 x 8 3/4 x 1 3/4-inch baking dish, within 1 inch of the top.
  4. Bake the meat crust for 25 minutes.
  5. Remove from oven and drain any excess fat.
  6. Reduce oven temperature to 350°F.
  7. In a bowl, combine shredded cabbage, green onions, salt, and red pepper sauce.
  8. In a separate bowl, beat the eggs and light cream together.
  9. Spread the cabbage mixture over the baked crust.
  10. Pour the egg and cream mixture over the cabbage and meat crust.
  11. Sprinkle with shredded Swiss cheese.
  12. Bake at 350°F for about 20-25 minutes until set and golden.
