Ingredients

  • 2 to 3 lb. stewing beef
  • 2 carrots, sliced

  • 2 Tbsp. chopped parsley
  • 3 c. beef broth
  • 1 peeled tomato, chopped
  • 2 c. dry red Burgundy wine
  • 1/2 lb. sliced mushrooms
  • 2 Tbsp. flour

Instructions

  1. Put all ingredients except mushrooms and flour into the slow cooker and mix.
  2. Cover the pot, turn on low, and cook for 8 to 10 hours or until the beef is tender.
  3. During the last hour of cooking, add the sliced mushrooms.
  4. To thicken the sauce, remove 2 cups of sauce from the pot, stir in the flour until smooth, and return to the slow cooker.
  5. Allow to cook for a few more minutes until the sauce is slightly thickened.
  6. Let the stew cool slightly before slicing and serving.
