Ingredients

  • 6 tortillas
  • 1 lb. lean ground beef
  • 6 oz. can tomato paste
  • 1 can chilies and tomatoes
  • 2 onions, chopped
  • dash of cayenne pepper
  • 1 cup grated Cheddar cheese
  • shredded lettuce
  • 1 fresh tomato, chopped
  • salsa (if desired)

Instructions

  1. Preheat oven to 300°F.
  2. Bake tortillas until crisp, about 10 to 12 minutes.
  3. Increase oven temperature to 350°F.
  4. Brown the ground beef in a frying pan; drain off any fat.
  5. Add tomato paste, chilies and tomatoes, half the chopped onion, and cayenne pepper to the beef; simmer for 10 to 15 minutes.
  6. Layer beef mixture, broken tortillas, remaining onion, and cheese three times in a 2-quart casserole dish.
  7. Cover and bake for 30 minutes.
  8. Serve with shredded lettuce, chopped tomato, and salsa, if desired.
