Ingredients

  • 2 lb. ground beef
  • 24 flour tortillas
  • 1 medium can enchilada sauce
  • 1/4 cup chopped lettuce
  • 1/2 chopped onion
  • 2 lb. Monterey Jack cheese shredded
  • 4 chopped cooked potatoes
  • 4 chopped carrots
  • 1/2 tsp. oregano
  • 1/2 tsp. cumin
  • 2 Tbsp. salt
  • 1 can chopped olives
  • 1 can sliced olives

Instructions

  1. Cook ground beef well and drain excess fat.
  2. Mix cooked beef with chopped onion, chopped lettuce, chopped carrots, chopped cooked potatoes, and chopped olives.
  3. Add 1 cup of shredded cheese and garlic powder to the beef mixture and combine.
  4. In a separate bowl, blend cumin, oregano, water, and 1/2 teaspoon of salt.
  5. Add the can of enchilada sauce to the mixture and heat in a pan.
  6. Dip each flour tortilla into the heated enchilada sauce, one by one.
  7. Add the beef mixture onto the dipped tortillas and roll them up.
  8. Place rolled tortillas on a baking tray, garnish with shredded cheese and sliced olives.
  9. Bake at 350°F for 30 minutes until cheese is melted and bubbly.
