Ingredients

  • 1 1/2 lb beef round steak
  • 1/2 cup dry bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons water
  • 1/4 cup flour
  • 1/3 cup cooking oil
  • 1 medium onion
  • 1 (6 oz) can tomato paste
  • 2 cups hot water
  • 1/2 teaspoon dried marjoram
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Place beef between sheets of wax paper and pound with a heavy skillet until quite thin.
  2. Cut the pounded beef into serving size pieces.
  3. In a shallow dish, combine bread crumbs, grated Parmesan cheese, egg, and water to make an egg wash.
  4. Dredge each beef piece in flour, then dip into the egg mixture, and coat with breadcrumb mixture.
  5. In a skillet, heat cooking oil over medium heat and cook the breaded beef until browned on both sides.
  6. Remove beef and set aside.
  7. In the same skillet, sauté minced onion until translucent.
  8. Add tomato paste, hot water, dried marjoram, salt, and pepper. Stir well and bring to a simmer.
  9. Return the beef to the skillet, spoon sauce over the top, and simmer for additional 10-15 minutes until cooked through and flavors meld.
