Ingredients

  • 4 lb. lean beef, cut into 1/2-inch cubes
  • 3 lb. large onions, sliced thick
  • 1/2 cup flour
  • 1/2 cup olive oil
  • 8 cloves garlic, crushed
  • 4 tablespoons brown sugar
  • 1/2 cup red wine vinegar
  • 1/2 cup chopped parsley
  • 3 bay leaves
  • 2 teaspoons thyme leaves
  • 1 teaspoon salt
  • Black pepper
  • 2 (10 1/2 oz.) cans beef broth
  • 24 oz. beer

Instructions

  1. Coat the beef cubes in flour and brown them in hot oil.
  2. Place the browned beef in an 8 to 10-quart casserole.
  3. Brown the sliced onions and crushed garlic in the same skillet.
  4. Add the onions and garlic to the casserole with the beef.
  5. Stir in the brown sugar, 2 tablespoons of vinegar, chopped parsley, bay leaves, thyme, salt, and black pepper.
  6. Bring the beef broth to a boil in the skillet used to brown the meat and onions.
  7. Pour the broth over the meat mixture in the casserole.
  8. Add the beer to the casserole.
  9. Cover and bake at 325°F for 2 hours.
  10. Remove from oven, place on stove top, and add the remaining vinegar.
  11. Cook until the sauce bubbles and thickens slightly.
