Ingredients

  • 1/4 cup celery, minced
  • 1 medium onion, minced
  • 1 clove garlic, minced
  • 2 tablespoons lard or drippings
  • 1 to 1.5 pounds ground beef
  • 1 large can tomatoes (3 1/2 cups)
  • 1 (6 oz.) can tomato paste
  • 1 1/2 teaspoons salt
  • 1 teaspoon sugar
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon oregano
  • 1 bay leaf
  • 1/2 pound lasagna noodles (6-8)
  • 12 oz. mozzarella cheese, grated
  • 8 oz. cottage cheese
  • 1/3 cup Parmesan cheese, grated

Instructions

  1. Preheat oven to 350°F.
  2. Cook celery, onion, and garlic in drippings until tender.
  3. Add ground beef and cook over medium heat until the meat is crumbly and no longer red.
  4. Add tomatoes and tomato paste to the meat mixture.
  5. Season with salt, sugar, cayenne pepper, and oregano.
  6. Place bay leaf on top of the mixture and simmer uncovered for 20 minutes. Do not stir.
  7. Remove bay leaf.
  8. Meanwhile, cook lasagna noodles as directed on the box.
  9. Arrange half of the noodles in the bottom of a 12x8x2 inch baking dish.
  10. Spoon in half of the meat mixture, then half of the cottage cheese, then half of the mozzarella cheese.
  11. Repeat layers: noodles, meat, cottage cheese, mozzarella cheese.
  12. Sprinkle grated Parmesan cheese on top.
  13. Bake uncovered for 30 minutes.
