Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 1/4 cup soft butter or margarine
  • 1 cup canned pumpkin
  • 1 cup yellow cornmeal
  • 2 eggs
  • 1/2 cup milk
  • 1 cup blueberries
  • 1/2 cup coarsely chopped walnuts

Instructions

  1. In a large bowl, beat sugar, butter, and eggs until smooth.
  2. Add pumpkin, milk, and cornmeal; beat until smooth.
  3. Sift flour with baking powder and salt, then stir into the batter, mixing just until combined.
  4. Gently stir in blueberries and chopped walnuts.
  5. Preheat oven to 350°F (175°C).
  6. Lightly grease a 9 x 5-inch loaf pan.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 60 minutes or until a cake tester inserted in the center comes out clean.
  9. Let cool for 10 minutes, then remove from the pan.
