Bob'S Potato Salad

Ingredients
- 5 to 6 lb. potatoes ⓘ
- 3 sticks celery
- 6 green onions
- 1/2 bell pepper ⓘ
- 4 hard-boiled eggs ⓘ
- 1 small jar pimentos ⓘ
- 3 to 4 Tbsp. mustard ⓘ
- 2 Tbsp. dill weed ⓘ
- 1 Tbsp. basil ⓘ
- 1 Tbsp. fennel relish seed ⓘ
- 6 Tbsp. mayo ⓘ
- 5 tsp. pickle ⓘ
- lettuce ⓘ
- celery ⓘ
- frozen peas
- onion ⓘ
- 1 c. Miracle Whip ⓘ
- 1 c. cottage cheese ⓘ
Instructions
- Cook potatoes until easily chopped, then let them cool.
- Finely chop potatoes, celery, green onions, and bell pepper.
- Layer the chopped vegetables in a Pyrex dish.
- Mix cottage cheese and Miracle Whip together until smooth.
- Spread the cottage cheese mixture over the layered vegetables.
- Sprinkle shredded Cheddar cheese and bacon bits on top.
- Garnish with lettuce, celery, frozen peas, and chopped onion as desired.
- Serve chilled.
