Ingredients

  • 1 1/4 cups dates
  • 3/4 cup nuts
  • 2 tbsp butter
  • 2 tsp baking soda
  • 2 eggs
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 1 tsp salt
  • 2 cups flour

Instructions

  1. Chop dates and nuts finely.
  2. In a bowl, combine chopped dates, nuts, butter, and baking soda, then pour over 1 cup boiling water and let stand until cool.
  3. Beat eggs separately.
  4. Add brown sugar, vanilla, and salt to the cooled mixture and beat well.
  5. Stir in flour until just combined.
  6. Fold in the cooled date and nut mixture, then bake at 350°F (175°C) for about 30–35 minutes or until a toothpick comes out clean.
