Ingredients

  • 3 1/2 cups flour
  • 1 teaspoon ground cinnamon
  • 3 cups whole bran cereal (Bran Buds)
  • 2 eggs
  • 1 cup applesauce
  • 1/2 cup packed brown sugar
  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 1/3 cup butter or margarine
  • 1 cup buttermilk

Instructions

  1. Combine 1 cup flour, brown sugar, and cinnamon in a bowl.
  2. Cut in 1/2 cup butter until mixture resembles coarse crumbs.
  3. Combine 1 cup cereal with 1 cup boiling water; set aside.
  4. Cream together 1/2 cup brown sugar and 1/3 cup butter.
  5. Beat in eggs one at a time.
  6. Mix in buttermilk, applesauce, and softened bran cereal.
  7. Combine the remaining flour, baking soda, and 1/2 teaspoon salt.
  8. Add the remaining cereal and egg mixture to the flour mixture; blend well.
  9. Pour the batter into two greased 9x9-inch baking pans.
  10. Sprinkle half of the cinnamon mixture on top of each pan.
  11. Bake at 400°F (200°C) for 30 to 35 minutes.
