Ingredients

  • 1 egg
  • 1/2 cup sugar
  • 1/4 cup soft shortening
  • 1 teaspoon baking powder
  • 1 cup Kellogg's Bran Bud cereal
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 cup raisins
  • 1 1/2 cups flour
  • 1 cup pumpkin
  • 1/2 cup milk
  • 1/4 teaspoon salt

Instructions

  1. Stir together Kellogg's Bran Bud cereal, milk, seedless raisins, pumpkin, and sugar. Let stand for 2 minutes to soften.
  2. Add the softened mixture to the bran mixture and beat in the egg and soft shortening.
  3. Sift together the flour, baking powder, salt, cinnamon, and nutmeg.
  4. Add the sifted dry ingredients to the bran mixture and stir only until combined.
  5. Fill greased 2 1/2-inch muffin pan cups three-quarters full.
  6. Sprinkle lightly with sugar.
  7. Bake in a moderately hot oven (400 degrees Fahrenheit) for about 30 minutes or until muffins are golden brown.
  8. Serve hot.
