Broccoli Chowder - The Bounty

A hearty broccoli chowder featuring tender broccoli, ham, potatoes, and Swiss cheese, perfect for comforting meals and suitable for family dinners or casual gatherings.

Ingredients

  • 1 lb. fresh broccoli
  • 2 (12 3/4 oz.) cans Swanson chicken broth
  • 1 1/2 c. milk
  • 1/2 c. cubed ham
  • 1/4 tsp. dry mustard
  • 3 green onions
  • 3 Tbsp. butter
  • 1/2 c. light cream
  • 1 tsp. salt
  • pepper to taste
  • 1 potato
  • 3/4 c. grated Swiss cheese
  • 1 Tbsp. chicken seasoned stock base

Instructions

  1. Cook broccoli, covered, in 1 can of chicken broth until tender.
  2. Remove broccoli from broth and chop coarsely.
  3. Add milk, light cream, ham, salt, pepper, and dry mustard to the broth and broccoli. Simmer and stir occasionally.
  4. Saute onions and grated potato in butter until softened.
  5. Add the remaining can of chicken broth and cook until the potatoes are soft.
  6. Add the potato mixture, grated Swiss cheese, and chicken seasoned stock base to the broccoli mixture.
  7. Heat just to serving temperature and serve.
