Ingredients

  • 10 oz. frozen cut broccoli
  • 2 cups cooked rice
  • 6 Tbsp. butter
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1 can mushrooms, drained
  • 1 can water chestnuts, drained
  • 1 can chicken broth
  • 1 cup milk
  • 2 cups ham, cubed
  • 8 oz. jar processed cheese spread

Instructions

  1. Cook 1 cup of rice with the chicken broth until tender. Set aside.
  2. Preheat oven to 325°F (160°C).
  3. In a large skillet or Dutch oven, melt the butter over medium heat.
  4. Add chopped onion, chopped celery, frozen broccoli, drained mushrooms, and drained water chestnuts.
  5. Cook until vegetables are tender.
  6. Add cooked rice, cubed ham, milk, and processed cheese spread to the skillet.
  7. Mix well until cheese is melted and ingredients are combined.
  8. Pour mixture into a large casserole dish.
  9. Bake at 325°F (160°C) for 30 minutes until heated through and bubbly.
