Ingredients

  • 1 small onion, chopped
  • 2 Tbsp. margarine
  • 4 c. boiling water
  • 1 lb. frozen chopped broccoli
  • 1 pkg. hash brown potatoes
  • 1 1/2 c. milk
  • 1/2 c. whipping cream
  • 1 Tbsp. lemon juice
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. ground nutmeg
  • shredded cheese

Instructions

  1. In a heavy pot, cook chopped onion in margarine until tender.
  2. Gradually stir in boiling water, frozen chopped broccoli, and hash brown potatoes.
  3. Heat to boiling, then reduce heat, cover, and simmer for about 15 minutes or until vegetables are tender.
  4. Stir in milk and whipping cream, cover, and cook over low heat for 10 minutes, stirring occasionally.
  5. Add lemon juice, salt, pepper, and ground nutmeg; heat for 5 minutes.
  6. Sprinkle with shredded cheese before serving.
