Broccoli Strudel Recipe

Ingredients

  • 1 Tbsp. Butter or possibly extra virgin olive oil
  • 1 c. Chopped onion
  • 1 lrg Brunch broccoli, finely chop
  • 1/2 tsp Salt Lots of black pepper
  • 2 med Cloves garlic, chopped
  • 2 c. Good bread crumbs
  • 2 c. Grated cheddar (opt)
  • 2 Tbsp. Lemon juice (more to taste)
  • 10 sht of filo pastry
  • 3 Tbsp. To 4T extra virgin olive oil for filo

Instructions

  2. Preheat oven to 375.
  3. Oil a baking tray.
  4. 2.
  5. Heat butter or possibly heat 1T extra virgin olive oil in a large skillet.
  6. Add in onion, and saute/fry for about 5 mins over medium heat.
  7. 3.
  8. Add in broccoli, salt, and pepper, and cook, stirring for about 5 mor min.
  9. Add in garlic, and saute/fry till the broccoli is just tender (about 5 more min).
  10. Remove from heat.
  11. 4.
  12. Stir in bread crumbs, cheese, and lemon juice.
  13. Taste to adjust seasoning.
  14. 5.
  15. To assemble: Place on sheet of filo on a clean, dry countertop.
  16. Brush the top lightly with oil, then add in another sheet.
  17. Brush with oil, then add in another.
  18. Continue till you have a pile of five leaves.
  19. Add in half the filling, mix in the sides, and gently roll till you have a nice neat little log.
  20. Brush the top with more oil, then carefully lift the pastry, and place it on the oiled baking sheet.
  21. Repeat this proceedure to make a second roll, and place it next to the first one on the tray.

  23. Bake 25-30 mins, till golden brown and exquisitely crisp.
  24. Cut with a serrated knife, using a gentle sawing motion.
  25. Serve warm or possibly at room temperature.
