Ingredients

  • 3 cups sugar
  • 1 cup salad oil
  • 4 eggs
  • 1 (1 lb.) can pumpkin
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons soda
  • 2 teaspoons salt
  • 1 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 2/3 cup buttermilk
  • 1/2 teaspoon vanilla
  • 1 cup pecans, chopped
  • 1 cup raisins

Instructions

  1. Soak raisins in hot apple juice, then strain and set aside.
  2. Combine sugar, oil, and beaten eggs; add pumpkin and mix well.
  3. Combine all-purpose flour, baking powder, soda, salt, ground cloves, cinnamon, nutmeg, and allspice in a separate bowl.
  4. Add dry ingredients to pumpkin mixture and mix until combined.
  5. Stir in buttermilk and vanilla, beating thoroughly.
  6. Fold in chopped pecans and raisins.
  7. Pour batter into two greased 9 x 5 x 3-inch loaf pans.
  8. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
