B'S Pumpkin Bread

Ingredients
- 3 cups sugar ⓘ
- 1 cup salad oil ⓘ
- 4 eggs ⓘ
- 1 (1 lb.) can pumpkin ⓘ
- 3 1/2 cups all-purpose flour ⓘ
- 1 teaspoon baking powder ⓘ
- 2 teaspoons soda ⓘ
- 2 teaspoons salt ⓘ
- 1 teaspoon ground cloves ⓘ
- 1 teaspoon cinnamon ⓘ
- 1 teaspoon nutmeg ⓘ
- 1 teaspoon allspice ⓘ
- 2/3 cup buttermilk ⓘ
- 1/2 teaspoon vanilla ⓘ
- 1 cup pecans, chopped ⓘ
- 1 cup raisins ⓘ
Instructions
- Soak raisins in hot apple juice, then strain and set aside.
- Combine sugar, oil, and beaten eggs; add pumpkin and mix well.
- Combine all-purpose flour, baking powder, soda, salt, ground cloves, cinnamon, nutmeg, and allspice in a separate bowl.
- Add dry ingredients to pumpkin mixture and mix until combined.
- Stir in buttermilk and vanilla, beating thoroughly.
- Fold in chopped pecans and raisins.
- Pour batter into two greased 9 x 5 x 3-inch loaf pans.
- Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
