Ingredients

  • 1/3 cup margarine or butter, melted
  • 1 teaspoon cider or white vinegar
  • 3 to 4 teaspoons red pepper sauce
  • 1/2 teaspoon salt
  • 4 unpeeled medium potatoes (about 1 1/4 lb.)
  • 1 cup Blue cheese dressing
  • 4 medium onions (each 4 to 5 oz.)
  • vegetable oil
  • 1/4 cup balsamic or cider vinegar
  • 1 tablespoon chopped fresh or 1 teaspoon dried oregano leaves
  • 1 tablespoon packed brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Heat coals or gas grill.
  2. Peel onions; cut a 1/2-inch slice from the top of each onion and leave the end intact.
  3. Cut each onion from the top into 8 wedges, stopping 1/2-inch from the root end.
  4. Gently pull the wedges apart.
  5. Brush four 12-inch squares of heavy-duty aluminum foil with vegetable oil.
  6. Place one onion on each square of foil.
  7. Loosely shape the foil around each onion.
  8. Sprinkle onions with vinegar, oregano, brown sugar, salt, and pepper.
  9. Wrap the foil securely around each onion.
  10. Cover and grill the onions 4 inches from medium heat for 50 to 60 minutes or until very tender.
