Ingredients

  • 3 medium onions
  • 1 eggplant
  • 3 peppers
  • 10 oz. frozen string beans
  • 2 large cloves garlic
  • 2 small zucchinis
  • 1 box frozen okra
  • 1/2 cup olive oil
  • 1 cup crushed tomatoes
  • 1/2 cup tomato sauce
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 tablespoon dried parsley

Instructions

  1. Place the onions, eggplant, peppers, string beans, garlic, zucchini, and okra in a large pan.
  2. Sprinkle with 1/2 cup olive oil over all the vegetables.
  3. Toss lightly so the vegetables are coated with oil.
  4. Pour the crushed tomatoes and tomato sauce over the vegetables.
  5. Add black pepper, salt, paprika, and dried parsley.
  6. Toss again lightly to combine all ingredients.
  7. Drizzle 1/4 cup olive oil on top.
  8. Bake at 400°F (200°C) for about 1 hour and 15 minutes, or until all liquid is evaporated and the vegetables are tender.
  9. Bake uncovered.
  10. Halfway through baking, gently turn the vegetables over with a large spatula.
