Ingredients

  • 1 large carrot, shredded
  • 1/3 cup packed fresh parsley, finely chopped

Instructions

  1. Whisk olive oil, grated Parmesan cheese, pepper, red wine vinegar, and anchovy paste in a large bowl until blended.
  2. Add cooked potatoes, pinto beans, sliced celery, shredded carrot, and chopped parsley to the dressing.
