  • 1/2 tsp. white pepper
  • 1/3 tsp. thyme

  • 2 Tbsp. flour
  • 2 slices fried bacon
  • salt and pepper to taste
  • 1 (8 oz.) can mushrooms

Instructions

  2. Add chopped onions, minced shallots, sliced carrots, garlic, fresh parsley, dry parsley, minced onions, and brandy. Stir and cook for 10 minutes.

Tips & Substitutions

For added depth of flavor, consider marinating the chicken in the brandy and spices overnight. If you don't have fresh parsley, you can substitute with more dry parsley, but reduce the amount by half. Feel free to use a mix of mushrooms for varied textures and flavors. For a spicier kick, add some Cajun seasoning or hot sauce during cooking.

Serving Suggestions

Serve the Cajun Coq Au Vin over a bed of rice or with crusty bread to soak up the delicious sauce. Pair it with a side of sautéed green beans or a fresh salad dressed with Oriental Vinaigrette for a balanced meal. This dish also pairs beautifully with a glass of red wine.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm in a saucepan over low heat, stirring occasionally, until heated through. You can also reheat in the microwave, but be careful not to overcook the chicken, as it may become dry.

Frequently Asked Questions

Can I use boneless chicken for this recipe?

Yes, boneless chicken can be used, but be aware that it may cook quicker than bone-in pieces. Adjust the cooking time accordingly to ensure the chicken remains juicy. Keep in mind that using bone-in chicken can enhance the flavor and richness of the dish.

What type of wine is best for cooking?

A full-bodied red wine, such as Cabernet Sauvignon or Merlot, works best for this Cajun Coq Au Vin. Avoid cooking wines, as they often contain added salt and preservatives. Choose a wine that you would enjoy drinking, as the flavor will concentrate during cooking.

Can I make this dish ahead of time?

Absolutely! This dish can be made ahead and actually tastes better the next day as the flavors meld together. Just reheat gently before serving. To keep the chicken tender, avoid boiling it during reheating.
