Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon ground red pepper
  • 1 cup milk
  • 1 egg
  • 1/4 cup margarine
  • 1 cup canned or frozen whole kernel corn
  • 1/4 cup chopped red pepper
  • 1/4 cup chopped onion

Instructions

  1. In a medium bowl, combine cornmeal, flour, sugar, baking powder, and red pepper.
  2. Stir in milk, egg, and melted margarine just until blended (batter will be slightly lumpy).
  3. Stir in corn, chopped red pepper, and onions until just mixed.
  4. Spoon mixture into 12 lightly greased 2 1/2-inch muffin cups.
  5. Bake at 400°F for 20 to 25 minutes or until done.
  6. Remove from pan and cool slightly on wire rack.
  7. Serve warm at room temperature.
