Calorie Counter'S Moussaka
Ingredients
- 1 lb. lean ground beef ⓘ
- 1 medium onion, chopped ⓘ
- 1 large eggplant, peeled and cubed (5 c.) ⓘ
- 1 (8 oz.) can tomatoes, cut up ⓘ
- 1 (1 lb.) can mushrooms, drained ⓘ
- 1/4 c. chopped fresh parsley ⓘ
- 1 clove garlic, minced ⓘ
- 1/2 tsp. oregano ⓘ
- 1/2 tsp. rosemary, crushed ⓘ
- 1/4 tsp. cinnamon ⓘ
- salt and pepper ⓘ
- 2 eggs ⓘ
- 1 (8 oz.) pkg. Neufchatel cheese, cut up ⓘ
- 1 c. plain yogurt ⓘ
Instructions
- In skillet, cook beef and onion until meat is browned; drain off fat.
- Stir in vegetables, mushrooms, herbs and seasonings. Cook, uncovered, for 15 minutes, stirring occasionally.
- Turn into rectangular baking dish.
- Use electric mixer or blender to blend together eggs, cheese, yogurt and 1/4 teaspoon salt until smooth. Pour over meat.
- Bake at 350° for 15 to 20 minutes.
- Serves 6 to 8.
