Ingredients

  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 clove garlic, crushed
  • 1 Tbsp. olive oil
  • 1 lb. Polish sausage or shrimp
  • 1 1/2 c. rice
  • 4 c. water
  • 1 can chopped tomatoes
  • 1 small can mushrooms
  • salt
  • pepper
  • 1 medium jalapeno pepper, chopped (optional)

Instructions

  1. Chop the onion, bell pepper, garlic, and jalapeno pepper (if using).
  2. Sauté the chopped onion, bell pepper, garlic, and jalapeno in olive oil until softened.
  3. Add the sausage or shrimp to the pan and cook until browned or cooked through.
  4. Stir in chopped tomatoes, mushrooms, rice, salt, and pepper.
  5. Pour in water, bring to a boil, then reduce heat to low, cover, and simmer until rice is tender and liquid is absorbed.
