Caramelitas are indulgent bar cookies featuring a crunchy oatmeal crust, gooey caramel layer, and chocolate chips, perfect for satisfying sweet cravings or serving at gatherings.

Ingredients

  • 2 cups flour
  • 2 cups oatmeal
  • 1 1/2 cups brown sugar
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 1/2 cups butter or margarine, melted
  • 50 caramels
  • 5 tablespoons milk
  • 1 1/2 cups chocolate chips
  • 1 cup chopped nuts

Instructions

  1. Mix the flour, oatmeal, brown sugar, soda, and salt together in a bowl.
  2. Add melted butter and crumble the mixture; set aside 1 1/2 cups for topping.
  3. Press the remaining crumb mixture into a 9 x 13-inch pan and bake at 350°F for 10 minutes.
  4. Melt the caramels in a heavy saucepan or double boiler.
  5. Add 5 tablespoons of milk to the melted caramels and stir until smooth.
  6. Pour the caramel mixture over the baked crust.
  7. Sprinkle with 1 1/2 cups chocolate chips, 1 cup chopped nuts, and the reserved crumbs.
  8. Bake at 350°F for an additional 20 minutes, then cool and cut into bars.
