Carrot Cake Ring
A moist, flavorful carrot cake ring with warm spices, walnuts, and raisins, perfect for celebrations or a comforting dessert for any occasion.
Ingredients
- 2 cups all-purpose flour ⓘ
- 1 1/4 cups salad oil ⓘ
- 1 cup packed dark brown sugar ⓘ
- 3/4 cup sugar ⓘ
- 2 teaspoons baking soda ⓘ
- 2 teaspoons ground cinnamon ⓘ
- 1 teaspoon salt ⓘ
- 1 teaspoon vanilla extract ⓘ
- 1/4 teaspoon ground cloves ⓘ
- 1/2 (6 oz.) can frozen orange juice concentrate ⓘ
- 4 eggs ⓘ
- 2 cups shredded carrots ⓘ
- 1 cup chopped walnuts ⓘ
- 1/2 cup dark seedless raisins ⓘ
- confectioners sugar (optional) ⓘ
Instructions
- Preheat oven to 350°F.
- Grease and flour a 10-inch Bundt pan.
- In a large bowl, measure all-purpose flour, salad oil, dark brown sugar, sugar, baking soda, ground cinnamon, salt, vanilla extract, ground cloves, and frozen orange juice concentrate.
- With a mixer at low speed, beat ingredients just until mixed, constantly scraping the bowl with a rubber spatula.
- Increase the mixer speed to high.
- Beat for 4 minutes, occasionally scraping the bowl.
- Fold in shredded carrots, chopped walnuts, and dark seedless raisins.
- Pour batter into prepared Bundt pan.
- Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
- Allow cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
- Optionally, dust with confectioners sugar before serving.
