Ingredients

  • 4 or 5 large carrots, scraped and sliced
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • pinch of ground nutmeg
  • 1 egg, slightly beaten
  • 1 tablespoon fresh minced parsley
  • peanut oil
  • powdered sugar (optional)

Instructions

  1. Cook carrots, covered, in a small portion of boiling salted water for 15 minutes, or until tender.
  2. Drain the cooked carrots and mash them; let cool.
  3. In a bowl, combine 1 cup mashed carrots with all-purpose flour, baking powder, salt, white pepper, ground nutmeg, beaten egg, and minced parsley; stir well to form a batter.
  4. Heat 1 inch of peanut oil in a large skillet to 325°F.
  5. Drop spoonfuls of the carrot mixture into the hot oil.
  6. Cook until golden, turning once, about 2-3 minutes per side.
  7. Drain the cooked carrot puffs on paper towels.
  8. Optional: sprinkle with powdered sugar before serving.
  9. Serve immediately.
