Ingredients

  • 1 1/2 lb. Great Northern white beans
  • 5 carrots

  • 1 tsp. dried marjoram leaves
  • 1 tsp. dried sage leaves
  • 1/4 lb. bacon
  • 4 lb. chicken, cut into 8 pieces
  • 2 Tbsp. butter or margarine
  • 1/8 tsp. black pepper
  • 1 (1 lb.) can peeled tomatoes
  • 1 lb. Polish sausage
  • 2 Tbsp. chopped parsley

Instructions

  1. In an 8-quart kettle with a cover, combine the beans with 4 1/2 cups of cold water and soak for 2 hours.
  2. Do not drain the beans after soaking.
  3. Meanwhile, pare the carrots and cut them into quarters.
  4. Peel the onions and stud one onion with whole cloves.
  5. Add the beans, chicken broth, bay leaves, half of the carrots, the cloved onion, celery leaves, 1 teaspoon salt, black pepper, garlic, thyme, marjoram, and sage to the kettle.
  6. Bring the mixture to a boil, then reduce heat to simmer, covered, for 1 hour.
  7. Add the remaining carrots and cook, covered, for an additional 15 minutes.
