  • 1 c. beef consomme
  • 2 Tbsp. parsley
  • 1 Tbsp. flour
  • 1 bottle champagne

Instructions

  1. Mix together salt, black pepper, and celery salt and rub inside and out of the turkey.
  2. Loosen the skin from the breast and rub with soft butter.
  3. Roast the turkey for 30 minutes at 425°F (220°C).
  4. Mix together sliced onions, thyme, beef consomme, parsley, and flour.
  5. Pour the mixture over the turkey.
  6. Reduce oven temperature to 325°F (160°C).
  7. Roast the turkey for about 1 hour.
  8. Pour champagne over the turkey.
  9. Baste the turkey every 30 minutes until done, about 2 1/2 hours in total.
