Ingredients

  • 1 large onion, chopped
  • 1/2 cup butter
  • 1 tablespoon yeast
  • 3/4 cup warm water
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 3 beaten eggs
  • 3 1/2 cups flour
  • 1 1/2 cups Cheddar cheese, grated
  • 1 1/2 cups whole wheat flour
  • 1 egg yolk, beaten with 2 teaspoons water (for glaze)

Instructions

  1. Saute chopped onion in butter until soft.
  2. Do not overcook.
  3. Remove from heat and cool.
  4. Dissolve yeast in a large bowl.
  5. Add honey, beaten eggs, and salt to the yeast; mix well.
  6. Add two cups of flour; beat well until the mixture is smooth.
  7. Add sautéed onion and butter; mix.
  8. Add grated cheddar cheese; mix in well.
  9. Stir in 1 1/2 cups flour and 1 cup whole wheat flour.
  10. Knead on a floured board for five minutes or more.
  11. Return the kneaded dough to a greased bowl.
  12. Turn dough over in the bowl to grease all surfaces.
  13. Cover and let rise in a warm place until doubled in size.
  14. Form the dough into 2 loaves.
  15. Brush the loaves with beaten egg yolk mixed with 2 tsp. water (glaze).
  16. Bake until golden brown and cooked through.
