Ingredients

  • 4 c. chicken broth
  • 1 1/2 c. diced potatoes
  • 1 c. diced celery
  • 1 c. diced carrots
  • 1/2 c. diced onion
  • 1/4 c. butter or margarine
  • 1/3 c. all purpose flour
  • 3 c. milk
  • 1 Tbsp. soy sauce
  • 8 oz. loaf process cheese spread, cubed
  • 2 c. cooked, chopped chicken

Instructions

  1. Combine chicken broth, diced potatoes, diced celery, diced carrots, and diced onion in a large saucepan.
  2. Cover and cook over medium heat until vegetables are tender.
  3. Melt butter in a Dutch oven over low heat; add flour and stir until smooth.
  4. Cook for 1 minute, stirring constantly.
  5. Gradually stir in milk; cook over medium heat, stirring constantly, until thick and bubbly.
  6. Gradually stir in the vegetable mixture, soy sauce, cubed process cheese spread, and cooked chopped chicken.
  7. Cook until the cheese melts and the chowder is heated through.
