Ingredients

  • 3 lb chicken parts or deboned chicken fillets
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 can tomato soup
  • 1 tablespoon Worcestershire or soy sauce
  • 1/4 cup cider vinegar
  • 1 large can pineapple chunks with juice
  • 1/4 cup brown sugar
  • 1 teaspoon dry mustard
  • salt and pepper to taste

Instructions

  1. Saute chopped onion and green pepper.
  2. Add tomato soup, Worcestershire or soy sauce, cider vinegar, pineapple chunks with juice, brown sugar, dry mustard, salt, and pepper; stir well.
  3. Add chicken parts or deboned chicken fillets to the mixture.
  4. Cover and cook for 45 minutes at 375°F.
  5. Uncover and bake for an additional 15 minutes, or use a pressure pan for 20 minutes.
  6. Serve over cooked rice.
  7. Great to freeze for once-a-month cooking.
