  • 1 tsp. salt
  • 1 (4 oz.) can drained mushrooms
  • 5 hard-cooked eggs
  • 1 (17 1/4 oz.) pkg. frozen puff pastry sheets
  • 1 egg
  • 1 Tbsp. water
  • 3/4 c. butter
  • 3/4 c. all-purpose flour
  • 1/2 tsp. white pepper

Instructions

  1. Preheat oven to 350°F and grease a 9 x 12-inch baking dish.
  2. Boil chicken nuggets in chicken broth until cooked through, then remove chicken and strain broth, reserving 3 cups.
  3. In a 4-quart saucepan, melt butter over medium heat.
  4. Add flour to the melted butter, stirring until bubbling and foamy, without browning.
  5. Whisk in the reserved chicken broth until smooth and thickened.

  12. Brush the top of the pastry with the beaten egg mixed with water.
  13. Bake for 35 minutes or until the pastry is golden brown.

Tips & Substitutions

For a richer flavor, consider adding sautéed onions or garlic to the butter before adding the flour. If you need a quicker option, use rotisserie chicken instead of raw chicken nuggets. You can also substitute the mushrooms with other vegetables like peas or corn. For a twist, try adding herbs like thyme or rosemary to the filling for added depth.

Serving Suggestions

This chicken and egg pot pie is delicious on its own but pairs wonderfully with a crisp green salad or steamed vegetables for a complete meal. For a heartier option, serve alongside mashed potatoes or a warm bread roll. You could also explore other comforting dishes like Cabbage-Ham Soup for a cozy dinner experience.

Storage & Reheating

Leftover chicken and egg pot pie can be stored in the refrigerator for up to 3 days. To reheat, cover with foil and warm in a preheated oven at 350°F for about 20-25 minutes until heated through. Alternatively, you can microwave individual portions for 2-3 minutes, but the pastry won't be as crispy.

Frequently Asked Questions

Can I use a different type of meat in this pot pie?

Absolutely! You can substitute the chicken with turkey or even a vegetarian option like mushrooms or lentils. Just ensure that any meat used is cooked thoroughly before adding it to the filling.

Can I make this pot pie ahead of time?

Yes, you can prepare the filling a day in advance and store it in the refrigerator. Assemble the pie with the puff pastry just before baking to ensure a flaky crust. Alternatively, you can freeze the assembled pie before baking; just extend the baking time if baking from frozen.

What can I do if the pastry gets too brown while baking?

If the pastry is browning too quickly, you can loosely cover the top with aluminum foil to prevent it from over-browning while allowing the filling to heat through. Just be sure to remove the foil during the last 10 minutes of baking to achieve that golden finish.
