Ingredients

  • 3 lb. chicken fryer, cut up
  • 2 Tbsp. oil
  • 16 oz. can sauerkraut (undrained)
  • 16 oz. can stewed tomatoes
  • 1/4 cup dark brown sugar, firmly packed
  • 1 large onion, cut in thin strips
  • 1 green pepper, cut in thin strips

Instructions

  1. In a 12-inch skillet, heat oil over medium heat and brown the chicken pieces.
  2. Remove the browned chicken from the skillet and set aside.
  3. Add the sauerkraut (undrained), stewed tomatoes, brown sugar, onion strips, and green pepper to the skillet. Mix well with the drippings.
  4. Transfer the mixture to an ungreased 13 x 8 x 2-inch baking dish.
  5. Arrange the browned chicken on top of the sauerkraut mixture in a single layer, skin side up.
  6. Bake uncovered at 325°F for about 1 hour, until the chicken is tender, browned, and skin is crisp.
  7. Sprinkle with salt and pepper before serving.
  8. Serve hot with potatoes or dumplings, as the mixture is juicy.
